                   Spring Classes, Menus and Offerings!
 
I know many folks are concerned with the economy but still want to get out and play. What about trying a cooking class? They are fun, you learn something new and you bring home skills to use in your kitchen as well as new recipes to try. Plus you get to eat everything we prepare in class. Bring your friends, family and even your enemies; eat together, you'll feel better....

I am teaching at four different cooking schools, so note the location when choosing your classes. In April look for classes at Lakewinds Co-op and the new Seward Co-op classroom.

This class should be really Fun!! My friend and fellow chef, Terry Zila and I will be put on the spot. We will be given a variety of ingredients…mystery bags if you will, and will create something-hopefully fabulous for you to eat! The fun begins when Terry and I unpack the bags and before your very eyes compose a fabulous menu. Pots and pans may fly, humor is a given and when all is said and done…you enjoy a four course dinner with endless cooking tips and more.

Are you committed to eating healthy and don't know where to start? Do you want to incorporate more organic and whole foods into your diet and want to stick to a budget? Then this class is for you! We will start our exploration of whole foods cooking with stocking your kitchen, tips for shopping and simple menus to prepare on a budget; focusing on proteins. We will prepare Braised Chicken Paprika, Tofu with Peanut -Ginger Sauce and Turkey and Squash Soup.

In part 2, we will take a field trip to the Wedge and cook up some fabulous meals with what we have chosen. The focus in this segment is on whole grains and legumes. We will be making Skillet Gnocchi with Chard and White Beans and an entrée made with the items you have chosen.

Saturday April 11  'How to Bake Gluten Free'    10 am-12 pm
Seward Coop Demonstration/Tasting $45 nonmembers/$40 members
Are you or someone close to you on a gluten-free diet?  Or, are you trying to cut down on processed flour products?  Then you know the frustration (and the expense!) of eating without wheat gluten.  Come learn the basics of making your own gluten-free mixes, pies and baked goods. In this hands-on baking class, we will be making Orange-Walnut Bread, Chewy Chocolate Chip Cookies, pie crust to make a fruit tart, and Blueberry Muffins, oh and something chocolate.....

This healthy and delicious menu is perfect for spring entertaining or Sunday night dinner for the family. We start with a Cream of Shiitake Soup, loaded with healthy mushrooms; Sear-Roasted Salmon Fillets with Shallot-Grapefruit Sauce, a delightfully different sauce with a tangy-sweet and spicy balance that pairs perfectly with the fish; Crispy, Roasted Asparagus, with a sesame crust and dipping sauce; ending with Strawberry Tart with a Pecan Crust, loaded with healthy nuts and luscious, bursting with vitamin C strawberries!
